• Preheat the oven to 240°C/220°C fan-forced. Cut sweet potato into fries. • Place fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide fries between two trays.
• While the fries are baking, combine Aussie spice blend and the plain flour in a shallow bowl. • In a second shallow bowl, whisk the egg. • In a third shallow bowl, mix panko breadcrumbs and shaved Parmesan cheese.
• Place chicken breast between two sheets of baking paper. Pound with a meat mallet or rolling pin until an even thickness, about 1cm thick. • Dip chicken into the flour mixture, followed by the egg, and finally in the panko mixture. Set aside.
Little cooks: Help crumb the chicken! Use one hand for the wet ingredients and the other for the dry ingredients to avoid sticky fingers! Make sure to wash your hands well afterwards.
• In a large frying pan, add enough olive oil to coat the base and heat over medium-high heat. Once hot, cook crumbed chicken, in batches, until golden and cooked through, 2-4 minutes each side. • Transfer to a paper towel-lined plate.
TIP: Chicken is cooked through when it's no longer pink inside.
• Halve bake-at-home burger buns and bake directly on a wire oven rack, in the oven, until heated through, 2-3 minutes. • Meanwhile, thinly slice tomato.
• Spread the buns with mayonnaise. • Top with some mixed salad leaves, the Parmesan crumbed chicken and sliced tomato. • Serve with sweet potato fries. Enjoy!
