• Trim baby broccoli and green beans. • Zest lemon to get a pinch then slice into wedges. • Pick thyme leaves.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook diced bacon, breaking up with a spoon, until golden, 4-6 minutes.
• Increase heat to high. Add broccoli and beans and cook until tender, 5-6 minutes. • Add thyme and butter and cook until fragrant, 1 minute. Season with salt and pepper.
• Transfer bacon, green beans and broccoli to a serving plate. • Squeeze with some lemon juice. Sprinkle with lemon zest, Parmesan cheese and walnuts. Enjoy!
