Cooking Steps

• Preheat oven to 240°C/220°C fan-forced. Cut sweet potato into fries. • Place fries on a lined oven tray. Drizzle with olive oil, sprinkle with crispy seasoning and toss to coat. • Spread out evenly, then bake until golden and tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

• Meanwhile, in a large frying pan, heat a small drizzle of olive oil over medium heat. • Cook caramelised onion & parsley beef sausages, turning occasionally, until browned and cooked through, 10-12 minutes.

• While sausages are cooking, thinly slice cucumber into rounds. Thinly slice tomato into wedges. • In a medium bowl, combine Dijon mustard (see ingredients), the honey and a drizzle of vinegar and olive oil. • Add cucumber, tomato and mixed salad leaves. Toss to coat and season to taste.

• Divide beef sausages, sweet potato fries and honey mustard garden salad between plates. • Serve with garlic aioli. Enjoy!
