• Preheat oven to 240°C/220°C fan forced. Cut potato into bite-sized chunks. • Place the potato on to a lined oven tray. Drizzle with olive oil and season with salt. • Toss to coat, then roast until tender, 20-25 minutes.

• Meanwhile, roughly chop tomato and cucumber. • Place your hand flat on top of each chicken breast and slice through horizontally to make two thin steaks.

• In a large bowl, combine plant-based crumbed chicken, garlic & herb seasoning, a drizzle of olive oil and a pinch of salt and pepper.

• When potatoes have 10 minutes remaining, in a large frying pan, heat enough olive oil to coat the base over mediumhigh heat. Cook plant-based crumbed chicken until golden and heated through, 2-3 minutes on each side. Transfer to a paper towel-lined plate.

• Meanwhile, crumble fetta cubes. • In a medium bowl, combine salad leaves, tomato, cucumber, fetta and a drizzle of vinegar and olive oil. Season to taste.

• To the tray with roasted potatoes, add the basil pesto and toss to combine. • Divide herby crumbed chick'n, pesto potatoes and fetta salad between plates. • Serve with mayonnaise. Enjoy!
