Roughly chop the roasted hazelnuts. Halve the cherry tomatoes.

Heat a medium frying pan over a medium-high heat. Add the hazelnuts and toast until golden, 3-4 minutes. Set aside in a small bowl.

In a medium bowl, combine the spinach & rocket mix, tomatoes, Italian dressing and a pinch of salt and pepper.

Transfer the cherry tomato salad to a serving plate. Top with the toasted hazelnuts and the shaved Parmesan cheese.
