Add the boiling water (1/4 cup for 2 people). Set aside. • In a large bowl, add classic oat mix, pepitas, the olive oil (2 tbs for 2 people), honey, peanut butter, chopped almonds, dates (including liquid from bowl) and a pinch of salt. • Stir until well combined.
• Transfer oat mixture into the prepared baking tin. Spread with the back of a spatula (1cm thickness). • Bake until golden, 15-20 minutes. • Allow to cool for 5 minutes.
• When muesli bar is cooling, place dark chocolate chips and the vegetable oil in a jug or medium bowl. • Microwave in 20 second bursts, stirring each time, until chocolate is melted.

• Once champion bar has cooled, slice into rectangles. • Dip the base into dark chocolate and transfer to a baking paper lined plate. • Transfer to fridge until chocolate has set, 30 minutes. Enjoy!
