• In a large frying pan, heat a drizzle of olive oil and the butter over high heat. • Cook beef mince and soffritto mix, breaking up beef with a spoon, until browned, 8-10 minutes.

• Add tomato paste, Italian herbs and garlic paste to the frying pan and cook, stirring, until fragrant, 1 minute. • Add snacking tomatoes, tomato sugo, chicken stock pot and the boiling water (11/2 cups). Simmer until slightly reduced, 3-5 minutes.

• While the sauce is simmering, slice fresh lasagne sheets into 3cm strips. • Reduce heat to medium-low and add lasagne strips and light cooking cream, stirring to combine. • Simmer, stirring occasionally, until the pasta is 'al dente' and the sauce is thickened, 6-8 minutes. TIP: Add a splash of water if the sauce looks too thick

• Stir through basil pesto and Cheddar cheese. • Tear over parsley and top with Parmesan cheese to serve. • Divide cheesy beef lasagne soup between bowls. Enjoy!
