Slice chicken breast into thin strips. In a large frying pan, heat a drizzle of olive oil over high heat. Cook chicken, tossing occasionally, until browned and cooked through (no longer pink inside), 3-4 mins. Cool slightly, then shred chicken with 2 forks.
Drain sweetcorn. In a medium bowl, combine corn, shredded chicken, BBQ sauce, mayonnaise and Cheddar cheese. Season with salt and pepper.
Build your sandwiches by layering mixed salad leaves and chicken filling between sourdough slices. Wrap in plastic wrap or foil. Refrigerate until ready to serve.
