• Bring a medium saucepan of water to boil. • Trim green beans and slice into thirds. Thinly slice carrot into half-moons. • Cook egg noodles in boiling water, stirring occasionally with a fork to separate, until tender, 4-5 minutes. • Drain, rinse with cool water and set aside.
• Meanwhile, in a small bowl, combine oyster sauce, sweet chilli sauce, brown sugar and a splash of water. • In a large frying pan, heat a drizzle of olive oil over high heat. • When the oil is hot, cook beef strips in batches until browned and cooked through, 1-2 minutes. Season. Transfer to a plate. • Return frying pan to medium-high heat with a drizzle of olive oil. • Cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes. Transfer to a bowl.
TIP: Cooking the beef in batches over a high heat helps it stay tender.
• Return pan with a drizzle of olive oil to high heat. • Cook green beans and carrot until tender, 4-5 minutes. Season. • Add ginger paste and cook, until fragrant, 30 seconds. • Add cooked noodles, chilli flakes (if using/see ingredients), sauce mixture and return cooked beef and prawns to the pan and cook, tossing to combine, 1 minute.
• Divide ginger prawns and beef noodle stir-fry with veggies between bowls. • Top with crispy shallots to serve. Enjoy!
